Ingredients

2 1/2 cups all-purpose flour

1/2 cup granulated sugar

3 teaspoons baking powder

100g cold unsalted butter

1/2 cup milk

1 egg

1 teaspoon vanilla essence

1/2 teaspoon salt

1 cup mixed fruit


Steps

  1. Preheat your oven to 180 degree Celsius.
  2. Pour the flour, baking powder, salt and sugar into a large mixing bowl.
  3. Cut your butter into cubes and add to the bowl.
  4. Use your fingers to rub your butter into the flour mix until it looks like breadcrumbs.
  5. In another bowl, whisk egg, milk and vanilla essence (set a little apart as your egg wash).
  6. Pour into the mixing bowl, add the mixed fruit and stir.
  7. Gather the dough into a ball and place on a flat, floured, surface.
  8. Roll gently with a rolling pin and use a cookie cutter to cut out as many circles as you can get.
  9. Place on a baking tray and brush each of them with the egg wash.
  10. Pop into the oven and bake for 15-20 minutes.

Tip

Do not over-knead the dough. If you do, the scones will not rise.
