Ingredients
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
3 teaspoons baking powder
100g cold unsalted butter
1/2 cup milk
1 egg
1 teaspoon vanilla essence
1/2 teaspoon salt
1 cup mixed fruit
Steps
- Preheat your oven to 180 degree Celsius.
- Pour the flour, baking powder, salt and sugar into a large mixing bowl.
- Cut your butter into cubes and add to the bowl.
- Use your fingers to rub your butter into the flour mix until it looks like breadcrumbs.
- In another bowl, whisk egg, milk and vanilla essence (set a little apart as your egg wash).
- Pour into the mixing bowl, add the mixed fruit and stir.
- Gather the dough into a ball and place on a flat, floured, surface.
- Roll gently with a rolling pin and use a cookie cutter to cut out as many circles as you can get.
- Place on a baking tray and brush each of them with the egg wash.
- Pop into the oven and bake for 15-20 minutes.
Tip
Do not over-knead the dough. If you do, the scones will not rise.
